Poached Quinces - Slow Cooker

6 large quinces

3 cups boiling water

1 1/4 cups sugar

1 lemon - zested and juiced (or 2 limes)

1 vanilla bean

4 cardamom pods

1 star anise


  1. Heat slow cooker for 20 minutes.

  2. Add boiling water and sugar - stir until sugar dissolves.

  3. Add lemon (or lime) zest and juice, vanilla bean, cadamom pods and star anise.

  4. Peel quinces and cut or slice in even sized pieces. Remove and discard hard core.

  5. Place quince slices in slow cooker, cover with lid and cook for 3 hours.

Quinces will "blush" - take on a beautiful pale pink/purple colour.
